Adobe Illustrator: Direction Handles Disappeared

Hello, I'm experiencing a very disabling problem in AI (I'm on a Mac).
When I delete an anchor point on my object, the path disappears and leaves an empty path. I therefore have to "join" the two anchor points to close my shape. However, when I do this, the corresponding direction handle for the recreated path disappears. Basically, I'm left with a path with two anchor points that only have one handle. I can't find how to recreate another handle.
This also happens when, accidentally, I move the handle too close to the anchor point until it reaches it, and it disappears.
How can I make the two anchor points appear?
I tried CMD + H, which has nothing to do with it.
I also tried Option + click, and that just recreates the shape but does not bring back my missing handles. HELP!

It is possible to create a new direction handle on an anchor point that no longer has one. To do this, simply select the "convert anchor point" tool (a small arrow with a line underneath it in the tools palette). Then click on the anchor point in question and a new direction handle should appear. You can then manipulate it as needed to shape the path as you like. If you want independent direction handles, you need to click and drag on an anchor point with the "convert anchor point" tool.
