Sorry, but I rarely see potatoes in pastry, and certainly never for financiers or religieuses!
Recipe for 15 financiers:
- 150 g icing sugar
- 50 g flour
- 60 g almond powder
- 20 g hazelnut powder
- 3 egg whites
- 140 g butter
Ingredients for the religieuse :
- Flour + Butter + Water + Eggs + Salt
(choux pastry) - Dark chocolate + Cornstarch + Flour + Egg yolks + Sugar + Milk + Salt (pastry cream)
- Sugar + Butter + Egg yolks
(buttercream) - Dark chocolate + Milk + Icing sugar
(glaze)

Nothing suggests that the answer should be a pastry, otherwise it wouldn't be a riddle.
Although it's almost certainly the answer, Pierr10's response is also valid, as the origin of the potato financier is obviously in Noirmoutier (and is indeed a pastry, made with potatoes); as for the religieuse (which it is not), I don't know, perhaps it's just the whim of a few chefs.
