Hello,
I bought a Huawei Matebook X Pro a few days ago with a USB-C adapter to connect my 2 external monitors, to have 3 extended screens (super handy)...
Problem: The computer sees my 2 external monitors as 1 single screen.
So when I try to extend, I have my laptop screen as the main screen, and the second screen (for Windows 10) displays in extended mode. EXCEPT THAT the second screen for Windows 10 is my 2 external monitors, which means that my 2 external monitors show the same thing...
I don't know if you understood me well, I hope so. If anyone has experienced this problem or can help me, I would be happy ;)

You need to buy a second adapter to connect the other screen to the second USB-C port on the computer.

I feel a bit silly for not having tested it... I do have another USB-C adapter and it works!
It’s a shame that we can’t do it with a single adapter because then I can't use my other screen when my laptop is charging (I only have 2 USB-C ports).

I have the same problem as you. Is the other USB-C port that you use to connect the second external screen the one you use to charge your laptop? Did you buy a second docking station?
I have the Matebook 13, and given the configuration, I should be able to have 2 external screens as well.
