I'm sure that until yesterday there was an option "Change message subject" in the toolbar. A very useful option!
This morning, it is nowhere to be found! Did Thunderbird change something??
I updated to version 78.6, but this option is not included!! Too bad!

It's indeed the add-on I gave you the link to.
Nothing to do with standard Thunderbird.
Also, be aware that add-ons are developed at the discretion of volunteer developers, and when a new major release like the recent 78 comes out, they are most often incompatible and require the developer to get back to work to adapt it, which usually only makes it available some time later, if at all. -

Personally, I've never seen this option and I'm wondering what it could possibly be for. However, without kicking myself in the shins, I believe I know Thunderbird quite well.
If it's about changing the subject when forwarding to other recipients, you just need to edit the "Subject" line like you would edit any text.
Otherwise, please clarify.
Version 78 brought a number of changes to the message composition interface. Is that what you're referring to? -

This option is very useful, in my opinion!
For example: you ask a friend how your broken arm is doing? With the topic "your arm." And he replies, it's okay, but my leg is also broken, and he explains a bunch of things about his leg... and his trip to Peru, etc., etc. In that case, I find it interesting to change the subject to "Your leg and Peru"!
But I found it in the meantime. In the message list, right-click on the message without opening it, and there you will see the last line of options "Edit message subject." You can change the subject that will appear in the message list but not in the message if you open it. Unlike Outlook, which changes the subject in the message as well.

I am indeed on version 78.6, just like you, and when I right-click on an email in the list without opening it, I get this:

That said, I still don't see the usefulness of it because I don't keep my received messages in the inbox, which is just a transit place, just like my mailbox on the street, but I classify them by theme in my local folders, and that’s enough for me. -

EditEmailSubject MX
Modify the subject lines of received messages.
This module allows you to change the subject of a received message.
Since version 2.0, there are two options:
1- The change occurs at the level of Thunderbird's local database, and not in the message itself (the Subject in the Header remains original).
2- The change is made in the mail header (compatibility with IMAP server)
To access the Option, from Thunderbird 60:
1- Enable the menu bar with a right click
2- Menu "Tools > Add-on Options > EditEmailSubject"
3- Check/uncheck the box
To use it:
1- Right click on the email, menu "Edit message subject"
2- Press "E"
