Hello,
My TV restricts me in terms of applications (no myCANAL, Disney+, etc.), it's one of the first Smart TVs.
I want to buy an IPTV box.
Which model do you recommend? I would like it to have an ethernet port. Are there any with a hard drive to record programs?

IPTV is not illegal through Android TV boxes or TV Sticks like Chromecast, for example.
However, what is illegal are the applications and the usage (you are not allowed to access a paid subscription "for free"!) that can be problematic, in my opinion.
I watch TNT on my PC with Molotov TV, so I'm doing IPTV and as far as I know I'm not breaking any laws...
The Nvidia Shield Pro box seems really good to me: https://www.nvidia.com/fr-fr/shield/shield-tv-pro/
Then, there's also the Apple TV box (not Android but Apple TV), but you can't expand the storage capacity from what I've read. And if I read correctly, you can't install Kodi...
After that, there's also the very popular Xiaomi Mi Box S, but it doesn't have an Ethernet port by default so its usage is limited to streaming via WiFi, but you can add an adapter, I think, and plenty of other media gateways that are worth what they are (Roku Ultra, Mecool box, MAGICSEE, the Sunnzo X96, etc.)...
As for being able to benefit from all the paid subscriptions you have on one single box, make sure to do your research well before buying your Android Box. Also check if the storage capacity can be expanded because generally, most TV boxes don’t offer this possibility, it seems to me.
