If you are in a word processor, a table can expand over an infinite number of pages...

  In fact, when I insert my table into the body of the text, it automatically goes to the next page since there isn't enough space to display it fully on the page I'm working on.
  I would like to know if it is possible for the table to span multiple pages to avoid blank spaces.
  Also, in some cases, the table overlaps with my footnotes...

The problem is that when you insert your table, it becomes an image (you can't modify the data inside it, right?).
If you're starting from a spreadsheet, the solution I see is to copy-paste small bits of the table no larger than the space where there's a blank.

It's extremely curious ...

Take a blank page; do INSERT / Table and choose your number of rows and columns; the table overlaps multiple pages without any problem ...

What manipulation or settings have you done that are untimely?
For example, didn’t you click on "Repeat at the top of each page ..."?

  1) Go to https://www.cjoint.com/
