I advise you to completely uninstall the Epson Scan driver/software and use the "Generic Epson" driver that Windows 10 will automatically install. Then use Windows Fax & Scan (Windows key + R then
wfs
) or this software that is 100 times more intuitive than most, simple and complete: https://scanmanager.muet.fr/, which is free and seems to be of French design! Then go to the options and select the generic Epson driver if it is displayed!
Epson doesn't care about older models, the new scanners have the next-generation Epson Scan, while the older models (which were released at the time of Windows 8.1 or before) are left with bugs and an Epson Scan worthy of the 2000s... it's pathetic on their part; it doesn't even work well on Windows 10, except to crash the PC and show that the scanner is not connected one time out of two!! Whereas on Windows 7 and 8, there are no issues; it's not Microsoft's fault, but Epson's for letting this software stagnate for 15 years, which is the same without major updates (except for the latest models!!!)
I had been struggling with this for weeks, uninstalling, reinstalling, unplugging, etc., without finding a definitive solution! And now everything works with this software and the generic driver... I hope to help. -

If this scanner is properly installed and recognized by Windows 10, have you tried to do a scan using the Fax and Scan option included in W10?
If not OK >> Can you provide the exact model and name of this tool?

In the search bar at the bottom left, type Fax and Scan and in the window that opens, click on this tool at the top, then a new window will open and you will click on New Scan..

I have an Epson XP 800 all-in-one
here's the message received when I want to scan
the files cannot be saved to the selected folder because you do not have the appropriate access rights. Please select another folder. -

Personally, I would completely and cleanly uninstall this printer, restart the computer, and do a new installation via the Epson site, which seems to provide everything needed for this printer to be compatible with Windows 10 >> See this link

As mentioned in my message #15, did you perform a clean and complete uninstallation of this printer and not just the Scanner option?
If not, I suggest you do that, restart the PC, and perform a new installation via the Epson website mentioned above.

According to your screenshot, it seems that it's not the scanner that's the issue but the path where you want to direct the document?
Have you tried changing the storage location to Desktop instead of Images

In the end, Epson wasn't to blame >> ..It's surprising that they didn't know about the bug, especially the technician from Windows online support you spoke to on the phone?? It just goes to show that we're not too bad at CCM
