Hello,
I numbered my pages by inserting a special character into my template, but when exporting to PDF all my numbering disappears. Do you know a setting or a workaround?

It is absolutely "normal"
When we create a PDF, whose original purpose is to be universally readable, you must avoid special glyphs. This font is not found on your machine.
The reason is that a PDF document remains a document that needs a "reader."
If when creating the document you include non-standard glyphs, you must also enable the option that will include this special font WITHIN the PDF document. Otherwise, a standard reader on another machine or that does not specifically include this font will not be able to read these characters that it does not know.
In any case, a pdf intended for sharing and standard readability (on the majority of readers) you must avoid putting anything other than standard characters, under penalty of not being legible correctly.
