Hello,
After using the Plume tool, I'm unable to select the outline of the path which is grayed out...

not sure I understood everything either, we select a path with the path selection tool (black arrow or shortcut key: A)
to create a stroke on a path:
take the brush
at the top choose a calligraphic shape for example, adjust the thickness and opacity (that will be your stroke)
check if you want both icons at the top for pressure sensitivity, it will create a slightly softer stroke
outline with the pen then right-click > stroke path
there you choose shape and check simulate pressure

When the shape suits you, open the path panel and click on the path outline icon

You need to make sure your brush is in path mode (top left, middle icon)
Then select a shape from the brush options at the top
Make sure the foreground color is set to black
Then go back to the brush, right-click > path options > shapes > simulate pressure
