Video extraction software for MKV format?

Hello,
I am looking for a software that can extract the components of a video in MKV format, such as the audio, subtitles... I tried MKVCleaver and MKVExtract but neither works. For MKVCleaver, the extraction cannot start because the button meant to launch it remains unclickable. MKVExtract crashes as soon as the application opens because a file is missing in the folder.
Do you have another similar software? I’ve searched around a bit but can’t find one.
Alternatively, a software in the same style as MKVtoMP4 would also suit me, since selecting the audio and subtitles is possible, but I’m having a problem with some of my videos, where the software doesn’t pick up the subtitles (even though there are 5 languages available when I play the videos in VLC)
