Format/Cells/Borders, Okay I know that, my question implied it.
Therefore, it seems that it is not possible to modify these predefined thicknesses. Too bad because they are really poorly thought out. The gaps between values are too large for my taste (e.g. 1.00 pt, 2.50 pt, and 4.00 pt for the three lines I use the most), intermediate values would be welcome.
Let’s dream of a future version where these values could be customized....

To define the thickness of the borders:
- Format, Cells ..., Borders
- it is also possible to add the "Line Style" button to the Formatting toolbar

No; the borders of the Formatting toolbar are predefined, therefore not modifiable, and you cannot add to them.

But by going to Format/Cells/Borders, you can manage the thickness of each line and its color as you wish, and you can obtain the arrangement of lines with a single click!

I tested your suggestion, it's called Border liner, a supplementary module for Open Office. I installed it, but it remains inactive, impossible to create any borders. There must be something...
Anyway, I don't think it meets my needs. The tool like 'Format/Cell/Border' offers the same predefined borders that cannot be customized. I will keep looking on the Oo site to see...
