Disable printer ink level

Hello,
I have an EPSON Stylus Photo RX425 printer, I changed the ink cartridges not long ago and now my computer is telling me they are already empty even though it was printing perfectly well 5 minutes ago, without any color missing.
I know very well that there is still ink left in my cartridges and I would like to use it all the way to the end (those damn cartridges are really expensive, so I might as well use them fully)
So I would like to know how I can disable the ink level detector or something else so that I can continue printing?

Thank you for the information.
A little clarification regarding the cartridges that have just been replaced and are reported as empty. For each new cartridge, apply a tissue to the cartridge opening to check that the ink is flowing properly. If necessary, gently insert the end of a small paperclip into the cartridge and apply the tissue again. If ink comes out, you can install the cartridge; otherwise, repeat the process.

Thank you for the information, as several times the machine rejected the cartridge because the opening didn't seem wide enough; I will do as you say from now on.
