Phone number not appearing on the bill

Hello,
I have a problem and I don't know where to turn, so I'm coming to you for help.
My wife has an issue with a man who is harassing her. I have his cell phone number because my wife was chatting with him before he lost it, as initially, it was just text exchanges for work, so she also sent him texts that have since been deleted. Now, since his antics continue, he is harassing her, so we went to file a complaint. However, the police have difficulty believing our story because his number does not appear on our bills!!!
How is that possible? Can someone hide their number on the other person's call bill electronically?

The numbers that appear on your invoices are those you called, not those who called you.
On a mobile phone, incoming calls are listed in the call history.
As for SMS messages, they only appear in the SMS list of the mobile phone; if you deleted them, well... there are no traces left.
Very difficult to catch a black cat in a dark room.
Especially when it's not there...
The problem is that the number does not appear on our invoice even though my wife sent SMS (not WhatsApp), so it should be there but it's not.
I saw while searching online that this has happened to other people but there is no explanation.
Is this something that can happen?
On my Orange bill, the numbers related to the text messages I sent do not appear; I have only indicated the number of SMS sent. Nothing about those I may have received.
I think that if you want to have the list of numbers that send SMS to your wife's phone, only the operator is able to do it... Furthermore, I am not sure that a request of this kind from an individual would be honored; in my opinion, only the police or gendarmerie can make such a requisition.
