Hello,
I have several RJ11 phone sockets at home (in the multimedia room, in my kitchen, my mezzanine),
If I'm eligible for fiber and the technician comes for the connection, I will have fiber,
the ADSL telephone cable will be replaced by the fiber cable, which will be connected to my Livebox, OK.
How will this affect my RJ11 phone sockets????
There is a phone port on the Livebox, I can connect my phone, but
will the phone sockets become unusable????
Configuration: Linux / Firefox 78.0

No... the fiber cable will come through the same path as the telephone line...
Then it's up to you to determine where to put the optical terminal (PTO) (the equivalent of the DTI for the phone).
You mention seeing several sockets, they must be RJ45 as Clarckos points out. (RJ11 and RJ45 are very similar - RJ11 is slightly smaller)
The ideal would be to place the PTO terminal and the box in the electrical distribution cabinet, usually where the telephone comes in (DTI) and use the RJ45 sockets to carry Ethernet signals.
But this assumes having RJ45 sockets wired for Ethernet (8 wires) and not just for telephony (only 2 connected wires) and that in the cabinet there is a patch panel (RJ45 sockets at the other end of the telephone cables)
There are many discussions on the subject in the "Wiring" forum

A photo of your electrical cabinet with the DTI would be a plus.
And it would be good to check how the telephone sockets are wired in your various rooms.
Very difficult to catch a black cat in a dark room.
