Chapter numbering with a master document

Hello,
I have a master document that contains a title and chapters (I > A > 1 ...) each time. Each of my sub-documents is well-numbered when opened individually. However, when I open the master document, my level I titles (the "I, II, III, IV ..." in my example) do not restart at I with each new document.
Instead of:
Title of my first sub-document
I
A
1
2
B
II
A
Title of my second sub-document
I
A
B
II
...
I get:
Title of my first sub-document
I
A
1
2
B
II
A
Title of my second sub-document
III
A
B
IV
...
I tried to right-click on the numbering to "set a numbering value" and set the value to "I" in the sub-documents, but it doesn’t work. Upon reopening the master document, the level I numbering continues from one sub-document to the next.

You say "Each of my sub-documents is well numbered"...
The following proves otherwise.
I don't know how your numbering was done, but certainly not according to the rules of the art.
When working with a master document and sub-documents, it's important to spend a little time (before starting the writing work) to create a set of styles. The best approach is then to use this set of styles for the master document and for each sub-document. And if that’s not the case, it can be fixed, as long as you use the same style names, but it’s riskier.
In any case, this set of styles should therefore include the numbering. Generally, there is a significant lack of knowledge about Word, especially regarding hierarchical numbering.
So, to recover the "thing", try the following procedure:
- Open a copy of your master document, and ensure that all sub-documents and the original master document are closed.
- In this new master document, delete the existing numbering, create a hierarchical numbering, and apply each level to the 3 title styles. Explanations here:

- Save everything as a Style set.

Normally, this should solve the problem... But it's not certain. You may need to remove manual formatting, but that... depends on your document which I do not know. Or perhaps you will just need to reapply the newly defined title styles. You can do this using this method, except that it involves replacing the style with the same one:

Make sure to respond "Ignore changes and apply the style as is".

to be honest, all these concepts are things I master perfectly with LibreOffice, software in which I have managed to do much more complex things than this for years.
For professional reasons, I am forced to use Word for this master document and I think I am bewildered by all the choices that are made "automatically" by the software, surely to make life easier for the user but which are confusing when one is used to making one's choices of design by oneself and with full knowledge of the facts.
I tested your solution but, for obscure reasons, I did not achieve the desired result.
I lowered everything by one level (title --> title 1, title 1 --> title 2, ...) and I no longer have this numbering problem now.

It wasn't automatic, far from it!
Just a poorly done numbering at the start that needs to be mastered. And Word, like any software, requires learning. After that, once you know it well, you won’t have any problems... It’s the same for Libre Office or Google Doc, etc.
