Disappearing messages

Hello, I currently have an iPhone 8 64GB, with 17GB free and it's on 12.1.3 (the latest update to date).
For the past few days, my messages from one specific conversation have been disappearing; at least I've only noticed it in one. My phone indicates that the last message was sent on 05/03/19 in the details to the right in the main SMS menu...
Some of my sent messages in that particular conversation often date back to around 8 AM, even though it’s the middle of the day.
I think the problem stems from an adjustment I made to force the download of a heavy app over the cellular network: Settings > General > Date & Time > I turned off "Set Automatically" and moved the date forward a few days, then once the app was downloaded, I turned it back on and it immediately indicated the Paris time zone.
I've tried turning it off, starting it up, and restarting it but nothing works!
