Exchange data between two iPhones

Hello,
I would like to swap phones with my mother. I want the data from my iPhone 6 to go to my mother's iPhone 8, and the data from the iPhone 8 to go to the 6 (both have been used for some time).
I have backed up the data from both phones using iTunes (on two different computers, one of which is a Mac). I cannot use iCloud because both iPhone accounts are full.

I don't know what to do next to swap the data.

    Hello ellalalala, before transferring data between the two iPhones, you need to ensure that it's possible.

    First, both iPhones must be updated to the same iOS (12.0.1) because it is not possible to restore a backup from a newer iPhone to an older iPhone.

    In iTunes, you need to enable the "encrypt backup" option so that iTunes backs up the entire iPhone; without the "encrypt backup" option, iTunes does not back up all data. Enabling "encrypt backup" will require you to create a password that you must never forget.

    If your mother and you have different mobile service provider subscriptions, you need to ensure that both iPhones are unlocked (in case the iPhones were supplied by the provider).

    If everything is okay, check that the Find My iPhone option in iCloud settings is disabled, then on each iPhone, just restore it from the iPhone menu, preferably ensure that the iPhones are connected to Wi-Fi, go to Settings>General>Reset>Erase All Content and Settings. The iPhones will erase and restart on the setup menu, turn off both iPhones and swap the SIM cards, then turn them back on.
    Connect each iPhone to the corresponding iTunes and start the setup on the iPhone, and you will be prompted to restore the backup from iTunes.

    Also, make sure you know the Apple IDs and passwords for each of the iPhone accounts, and depending on the Apple account protection, check that the information contained in each account is correct.
