Hello,
What format is the scanned file in?

Uh? I just tried ;-)
What is the name of the scanned file? It has a name... The scanner may have called it something like image0001.jpg or text00004.pdf or you gave it a name when saving it with... or without an extension.
If Acrobat opens your file, it is probably a PDF, and there are software programs that allow you to modify this type of file. If it is an image (.jpg, .png...), you will need to fiddle with image editing software that is more or less sophisticated depending on what you want to do.
NB: the format is independent of the content: a .jpg can be a copy of a text, a PDF can contain a photo.
