How to connect a cut telephone wire

Hello,
I knocked down a partition in my apartment last weekend.
In order to remove the panel, I had to cut an electrical cable as well as a telephone cable. I installed the connectors on the electrical wire, but I'm not quite sure how to connect the telephone cable.
At BHV, they sold me the Extel WE 821 bis, but I can't find any instructions on the installation anywhere. Do I need to put the wires in the slots and press down with pliers on the red part?

There are a lot of wires in the cable; from what I understand, we only need to connect the white and gray ones... but what do we do with the others? Do we leave them "hanging" out of the sheath?
