Pivot Tables - Deleting Old Data

Good evening,
I can't seem to delete the old data in the filter lists and row labels of my pivot tables. I'm not sure if it's possible since I haven't found the information.
I'm using Excel (2007) with a data source sheet and several sheets with pivot tables to analyze my data.
I've updated the header row of my source sheet and also deleted some data from the source.
I have the same problem if I want to reuse my pivot table by copying it for another analysis or another file.
How can I delete this old data?

Right-click on any cell in the pivot table.

Click on "PivotTable Options" in the dropdown menu. A small window appears.

Select the "Data" tab at the top of the new window.

Under "keep deleted items from the data source" and "number of items to retain per field," choose NONE
click OK and refresh the table.
