it's not easy to find something you might like x) you enjoyed Naruto/FMA/HxH/Fairy Tail... the classic shonen stuff, but you didn't like Bleach/OP/Reborn...

Well, let's go by "genres":

To complete the shonen list:
soul eater, get backers, gintama, ...

There are the "slice of life" ones, anime with plots close to everyday life but with a lot of humor and fun:
Lucky Star, K-on!, Nichijou (which I highly recommend), Danshi Koukousei no Nichijou, ore no imouto, ...

anime based on nonsense and parody:
excel saga, binbougamiga!, ...

Ano hi mita (an anime that was very successful, very emotional)

Kuroko no basket

Baccano! and Durarara! by the same author are excellent anime with lots of characters, good animation/graphics

If you're more into thrillers, police, investigations, detectives:
monster (seinen), hyouka, higashi no eden, Gosick ...

and finally for science fiction:
haruhi suzumiya, steins;gate, ...

I just finished "Ano hi mita (...)" and I found it really amazing... The ending is heartbreaking

I must confess that the drawing also held me back on One Piece, but in the end, it's really great!
Have you READ FMA? The anime is absolutely nothing compared to the manga (not even Brotherhood).
Otherwise, I suggest "Avatar: The Last Airbender," which you might already know^^.
I have a very good site where you can find all the videos: Avatar Realms.
I recommend watching it in the original version (I don't like the French voices, but it must be a matter of habit).
There's also "K." It's...weird. But it's still nice!
On Google, you might need to type "manga K" to find it.

No, I haven't read FMA and it might be a good idea (even though I generally prefer watching to reading, being the lazy person I am).
Unfortunately, I've already seen the last two (even though I didn't think to mention them, I actually enjoyed them and I understand what you mean when you say that K is "space").

I don't really understand your tastes, I must admit ^^.
Mmmmmm I think I should suggest Toriko to you because it (might just perfectly) match your criteria and above all, it will make you drool all the time (discover why in the manga ^^). It's not finished yet actually ^^ it's currently at its 100th episode.
Mmmmmm I should also suggest a new anime? Hataraku Maou-sama already has 3 episodes ^^, in terms of graphics/atmosphere and humor, not bad... but I hope the action will improve, which is certain.
Mmmmmm Well, I think that's all for today (sigh, exhausted), I'll try to provide you with even more tomorrow if you want more ^^.
One last thing, if you haven't finished One Piece yet (you actually gave up after the first 20 episodes), I encourage you to continue, you will certainly like it and you'll probably get hooked, but it really depends entirely on you ^^.

Hi, among the seinen, there's Fate/Zero which hasn't been mentioned, graphically it's impressive and really, really good overall!

We don't really have much in common when it comes to anime x) except maybe HxH, Fairy Tail, and Naruto, but oh well...
You only mentioned shonen, maybe that’s why... Anyway, maybe you should try out shojo ^^ In general, the graphics are great and the emotions it gives us are more present (at least, that's my opinion.) Have you seen AKB0048? (a bit futuristic but it's really awesome *-* Especially the music) or Tonari no Kaibutsu (or even Kaichou wa Maid-sama)? If you're really into shonen, I'd suggest Soul Eater?

Let's say it's true that shojo doesn't particularly attract me (I'm a boy by the way ^^). What often bothers me is that they tend to make a big deal out of details, like when a boy brushes against a girl and they replay the scene in slow motion with a candy pink background and the characters smiling (I know I'm exaggerating ^^). I don't know if you see what I mean. As for Soul Eater, we'll see; I don't know if I'll like it, but why not =).

Yeah, I see the kind of Shojo you're talking about x) And don't worry, it annoys me too ;) But some are really different ^^ But the animes I recommend are different, at least try the first episode of each ;)

The Legend of Legendary Heroes,
Beelzebub,
Code Breaker,
Sword Art Online,
Samurai Champloo (nice music but the designs might bother you), Arcana Famiglia,
Beelzebub (pretty funny)

Hi, the post has been open for quite some time and I'm sorry for only speaking now :x...

For me, here’s a list of a few anime, since your tastes have changed, I’ll suggest:

-Hellsing and Hellsing Ultimate, it's a seinen with a story based on vampires but quickly turns to gore. Very enjoyable fights and a rather nice design.

-No Game No Life... You probably know it, but it's a good manga and the anime is great in my opinion

-Death Note, the inevitable...

-Tokyo Ghoul, quite gory but an enjoyable story, known by many so I’ll skip details

-Noragami, an anime with good graphics, a sublime story, and the characters are extremely endearing. Moreover, it has a good moral which I haven’t seen quoted..

-Akuma no Riddle, it's a manga set in a school but as assassins, I really got hooked even though the characters are mostly girls. There aren’t many episodes, so I recommend it

-School Rumble, I haven't seen it yet but I've heard it's really nice, so I'm adding it too

-One Out, a thoughtful sports manga focused on baseball, very psychological regarding the main character and a lot of strategy in my opinion, so I recommend it too
Regarding a series of sports manga, very good, Ashita no Joe and Hajime no Ippo, which are two boxing mangas that I find excellent
Also, I’ll mention Eyeshield 21 which is about American football and you'll see a similarity between One Out and the latter, but I won't say more... very strategic and very endearing, I recommend it as well
For basketball, I strongly advise you to check out Slam Dunk and very different from the latter Kuroko no Basket, but I love both and recommend them :x

- Miraï Nikki which has already been suggested to you,

-Btoom, a very good manga, gory but also psychological, it's originally an online game where players compete in teams but can only use bombs, except that one day, people are confronted with this game on a deserted island and for real, a story that made me thrill and I highly recommend it, it's a short series of 12 episodes

-Elfen Lied, very well-known, very psychological but also very gory with a plot that I particularly appreciate

-Highschool of the Dead, zombie manga but the anime is not finished.. and the sequel is only on paper, it's an ecchi seinen with quite a bit of action, I still recommend it

-Deadman Wonderland, a gory anime (once again... and quite well-known..) where prisoners are locked in a private prison and must compete in games organized by it, watch it to know more ^^

-Another, horror manga, gory and seinen once again, a dark and gloomy story with plenty of suspense, I highly recommend it

To change the genre a bit...

I suggest a well-known and appreciated anime by many, but I doubt you'll like it since it's futuristic..
I suggest,
-Guilty Crown

- In "comedy", ecchi and fight, I suggest Highschool DxD

That's what comes to mind for tonight... And I don't seem to have seen them on the topic... or maybe I'm just blind and that’s quite possible...

So check out the manga you don't know, they're pretty cool, it all depends on your taste. I'm using your opinions to find new ones too.

jigoku shoujo

I recommend "The Girl from Hell," or called in Japanese "Jigoku Shoujo." There are 3 seasons: the first one is in French, and the other two are in subtitled French, but it's a wonderful manga. Although it talks about hatred towards people, one character is always calm, and the end of the anime is marvelous. I really recommend it to you. Thank you for all your responses, feel free to share if you have other ideas.
My tastes in this matter have changed quite a bit now that I "know" a little more:
I generally prefer seinen now.
My favorite anime are:
- ano hana (which someone here recommended to me)
- seirei no moribito
- sword art online (the love story between Kirito and Asuna is really touching, even for me who generally doesn't like that)
- durarara (which I preferred to bacanno)
- zetsuen no tempest (which I have already mentioned)
- higurashi no naku koro ni (which is beautifully constructed)
- hxh which remains for me the best shonen along with fma (that's just my opinion)
- kuroshitsuji (quite dark but some aspects disturb me)
- medaka box which is the best release I have seen

But especially shinsekai yori which I find more than excellent

So if you have any other recommendations in this new direction, I would be delighted ^^
I admit I have pretty much exhausted what I've found that might interest me, but the resources seem more or less endless so I don't lose hope.

Honestly, One Piece is my favorite manga and the storyline is downright amazing. There are plenty of clues throughout the episodes, as if the manga were a kind of treasure hunt. In this manga, there's a lot of humor, sadness, really well-done battles, and adventure. It's true that the graphics aren't very good at the beginning, but it improves very quickly and the graphics evolve rapidly. I recommend you continue with One Piece a bit longer because the first 100 episodes aren't great in terms of graphics, but over time it gets better, and by episodes 200-300, the graphics are different. I'm on episode 691, and the graphics have nothing to do with those from the early episodes. Otherwise, you can read the manga ^^

Yes, yes, I understand, but 100 episodes is a long time to get hooked.
I'm not saying the graphics are ugly; they're actually above average, but it's mainly the character design that I just can't get into and that puts me off, and unfortunately, it stays quite similar (it's the style after all), and for me, if there’s one thing I can’t overlook, it’s the character design, even if the storyline is great... I have the same problem with Gurren Lagann and Soul Eater. I’ll admit that the themes don’t excite me much either, but I know it’s a good anime and that it has found its audience.

-Hollyland: quite dark, but the hero's evolution is magnificent!
-Noblesse: in color, battles with powers, the main character's adaptation to our civilization is quite funny!
-The Cube: in color, a game where you can change appearance and abilities thanks to a cube.
-Samurai Deeper Kyo: A samurai with two rival souls in one body.
