Restore your computer to a previous date

Hello,
I would like to restore my computer to a previous date. However, when I start the process (Control Panel > Security System > Action Center > Restore your computer to an earlier date), the date I want is not available, only 11/5, 11/13, and 11/26. But I want to restore it to 08/26! (NB: I had already tried to "turn back time" on my computer at the beginning of September, but at that time, NO date appeared in the menu..)
If I remember correctly, on my old computer (which I think was running Vista), when booting up my computer, I would press a key several times (F9/10/11/12, I can't remember), and the recovery menu would appear. Can this be done on Windows 7?
