I completed the first two parts with my starting character (troubadour) and a priest who mostly heals during the bosses, and it goes smoothly. Now I've leveled up my warrior, and to quickly gain experience at the start, I solo'd some metagluants (around 12,000 xp).
Now I'm at level 29 with my warrior (33 with my troubadour) and my priestess is level 34, and I'm getting ready to go to Kilimagmaro.
P.S. the priestess has a wand that steals PM, so I don't lose mine before going to the boss 8D

It's true that without a priest, you're not going to get far. The best at the beginning is: Priest, Warrior, Troubadour, Martial Artist/Thief or Mage of your choice. Then when you unlock a lot of classes, Gladiator, Paladin, Sage, Ranger would be the best choice (I have that team and I've finished the game).

To answer your question "Dragon," at the cemetery (at night I believe) there's the ghost of the mayor's daughter, you talk to her and follow what she asks you.

Also, to level up quickly, you need to go to the Sagita cave at the top of Dracocadis; there are mercury slimes that give 40,005 XP.

I just started Dragon Quest IX.
My main character is a troubadour (around level 15), along with a priest, a mage, and a warrior, all about level 12 or 13, and I'm in the town of Bacili.
There’s something I don’t quite understand and it scares me when I read the numerous posts online!!!
People talk about changing their character to a warrior, etc., but do you have to start from level 1??? And if I want to recruit another character (like a thief, for example), do I have to permanently part ways with one of my characters??? Is it impossible to get them back afterwards? (in the same condition I left them - weapons, armor, level, etc???)
Because when I started to have a team at Bérangère’s inn, I didn’t “invite a friend” but “recruited” a friend... What’s the difference???

Yes, if you change your vocation, you return to level 1 of your new vocation ;) But don't worry, you keep the level of your old vocation (here apparently troubadour) ;) That means if one day you want to go back to being a troubadour, you will still have the level you had when you changed.
As for your friends, when you want to swap your friend, you will leave the friend at the inn and they will keep their current level.

Not particularly, I haven't finished the game completely (because it's long) even though I killed the final boss and everything. I made it for my main character, a warrior (before I was a troubadour like everyone else), but otherwise I've kept the same teammates since the beginning, which means a warrior, a mage, and a priest ;) afterwards I created some new ones just for fun, but they haven't really helped me in my story, let's say ;)
Or else what you can do is buy an AR (action replay) that allows you to create codes; there are plenty for Dragon Quest IX!!
It costs about 15 to 25 euros ;)
There is another more economical solution:
Go to the Quarantomb (the temple where you defeated the Epidemon), head to the second room, wait for a metal slime to appear, let it move once, attack it and kill it with "metal blade"; normally you gain 1,000 xp (just sometimes they escape ^^")

Otherwise, a good team is the hero with Pyroforce (we learn this by being a Armagician with skill points), a martial artist with Tension, a mage, and a priest.
The hero does an accompaniment and then Pyroforce on the martial artist, the martial artist uses Tension, the mage does Alteration twice, then he Decuplo on the martial artist and the priest heals.
In 3 turns, if everything goes well, we have a guy with Tension at 100, a boosted attack, and the power of fire, an enemy with low defense, and a priest who is healing.
The martial artist uses Teraflur and it hits twice in a row.
I take down all my bosses like that in one hit.

P.S.: I'm also at Kilimanjaro, and all I can tell you is to choose either a gladiator or a warrior and use the dragon blade... It's simple.
