Hello,
I would like to know if it is possible in Illustrator to convert several paths into one shape?
Let me explain: for example, I draw ellipses that do not touch, I connect them with two pen paths, and I would like to be able to select only the shape that appears between the two ellipses (so that I can apply a gradient to it, for example...). Is this possible, and how can I do it?

I'm interested, I've gone over the tools, I couldn't find the form designer tool.
Can you specify?
P.S. I have CS4.
I'm using Illustrator CS5, the Shape Builder tool is located in the tool palette:

Otherwise, you can achieve pretty much the same result with the Pathfinder - especially with the stencil (Window > Pathfinder or Shift+Ctrl+F9).
But for what I was trying to do, I find the Shape Builder more appropriate (no need to close the two paths, among other things).
