Illustrator - Color issues

Hello,
I recently realized that my drawings in Illustrator looked dull and for good reason: I can't achieve vibrant colors.
Example: I draw a line with the pen tool and assign it a thickness, then give it a color. Let's say a beautiful saturated purple (R=180, G=0, B=255). But when I look at the color of the stroke in the workspace, it seems less true to what I picked in the "color box" (color picker in English). I reselect the line and check its true color, and indeed, the value is closer to gray (R=120, G=68, B=145). I’ve tried reassigning it many times, but it doesn't work.
Is this a settings issue? I don't understand why it won't apply the true color...it's supposed to be simple! Help!!
