The Facebook Messenger app does not offer an option to change the language. Just change the language of your phone:
Another option: go through the site https://www.messenger.com/ and change the language in Facebook.
- On Android or iPhone, go to settings
- Choose Language and region
- Change the device language
- Open Facebook Messenger, the language has changed
