Xiaomi A2: safely uninstall apps and disable updates

I need to help someone get used to their new smartphone, but I'm not really good at it either.

Is it possible to uninstall the pre-installed apps? For some, I've been able to disable them or force stop them. For others, I have no choice: uninstall or nothing.
I'm particularly thinking of the totally useless game Asphalt whatever (it offers me to uninstall it, I can't disable or force stop it), puzzle, B.tv. that kind of stuff.

If I uninstall them, is there any risk? No specific actions to take?

For others where I can still Force Stop, I'm unsure if it could cause the smartphone to malfunction. For example: digital wellbeing, google go, google podcast, google assistant, comments, carousel wallpaper, etc.

This is someone who doesn't use the Internet (a small plan with very little data, blocked to avoid exceeding the limit), who simply uses the phone like in the old days, so no games, no voice commands, no apps, or anything like that.

Finally, a question about updates. Is it important to consider them for security?
Is it related to internet usage? If so, then we’ll have to wait because the plan has already reached its limit.
How can I ensure it doesn't send notifications? I've tried to disable as many notifications as possible :( but yesterday it rang to inform about an update if we wanted it!
Wi-Fi has been disabled, but mobile data remains activated for MMS.

Hello

  • Go to settings then apps
  • Click on the icon
  • Uninstall

Or

  • Go to the home screen (where all the icons are)
  • Swipe up and hold to uninstall on the icon

What about the updates for the phone itself? Is it better for the phone's security? It recently gave a notification indicating that the last update is obsolete.
Knowing that the person does not download anything, as I explained. She does not go on the Internet.
