Hello,
here is a message I’m sending mainly for confirmation rather than help.
So I was thinking about using Cat5e cable (I need to run 50 m on one side and 80 m on the other). Then there are trenches to dig, so I think I should shield the cables, but what type of jacket/covering can I use. Also, is it necessary to put sand to further insulate the sheath???
That’s about everything I can think of, and I look forward to your feedback.

If the grounding cable will be buried in the ground, you don't need to put a sleeve.
But if it will be buried in concrete, you either put it in a PVC conduit or a galvanized conduit. -

I’ve laid out a few networks in my “youth,” but never anything IT-related, so it should presumably be the same as electrical or fiber optic work… Regarding the cable type I can’t help you; but for the network, indeed a sand bed for laying is recommended, then laying the cable in its sheath and at least 20 cm of sand again, all compacted well, before replacing the topsoil or other material (pavers, slabs, etc.). A plastic warning net on the last sand layer is recommended (for anyone who might dig later so they don’t pull it all out). However I can’t tell you the color of the net (it’s coded by network type: red for electricity, yellow for gas, blue for water, green for telecoms, white for fiber optics; at first glance I’d say white would be the solution). -

To answer your question, when you install an exterior network cable (buried, in a conduit or aerial) you must comply with the installation standards established by the Government because exterior cables are typically Unrated, meaning they do not meet any standards on flammability and emission of toxic gas and fumes. In Canada an exterior cable must not enter a building more than 3 meters, and in the United States not more than 15m.
For a buried cable you should choose a cable that will resist outdoor conditions, shielded and containing silicone.
For an aerial cable the same type of cable without silicone but with a messenger to support it in the air.
For a subterranean cable in a sealed PVC conduit you use the same cable as the buried cable.
You must also install 2 protectors, one at each end.
Be careful you must choose protectors for network cables, those for telephone lines will cause problems on your network.
