Finally, it only worked for a few hours at my place, maybe a day. The next day... bam, everything turned back into gibberish... :-( I haven't found any other solutions to this day...

The sender of these messages must go to their messaging options to change the encoding. To find out how to do this, simply search on Google with something like "change encoding of outgoing messages".

I have the same issue.... it happened today.
On some emails, the accents in particular are replaced by Japanese characters.
The problem is not related to the sender of the message as they see the messages normally
and anyway, when I open my mailbox via Gmail for example (web site), the message
displays normally. It's only when I open it from my Mail app
on Windows that it bugs. I've been looking for the source of the issue, but I can't find it.

Is it possible that it's related to a Windows update?

for you, does not come from the sender (the poor guy, in a panic, rushed to the repair shop, which assured him that everything was fine on their end, and that it must therefore be from my side). I see here and there that I need to go into the language settings, select some encoding or "Western alphabet", but the problem is that "Mail" offers very few options in its Settings menu; and in no case an action on languages. Furthermore, the responses often concern "Outlook.com" messaging, whereas mine is indeed Windows Mail, as a central location for the messages received in my different inboxes. And like you, if I read my messages in their original mailbox, they are clear, without any "gibberish".
So, a big thank you to anyone who has the answer...

The message has been opened with different email accounts, and the problem is still there, I think it's indeed an issue with the sender's encoding.
