How to make an image or object black and white in Illustrator? Also, how to adjust the grayscale levels?

    Menu "Edit/Modify Colors/Convert to Grayscale"

    But Illustrator is not the best software for that. An image is converted in an image editing software (Gimp for example) and not in drawing software ...
