When you set a password and want to remove it, you need to enter that password to lift the protection; then you can delete it.
It's best to avoid setting a password unless absolutely necessary!

but I tried and it still doesn't work....yet I did uncheck "remember my password"....
when you want to open the document, a password is requested, is that correct?
If so, after unchecking "Password protect", you do complete the saving? If necessary, try giving it another name, but normally that is not required.
Otherwise, knowing that we usually undo an action in the same way we did it, what method did you use to set the password?
And as a last resort, copy/paste your document into a new one...
