Hello, my problem is simple, I would like to insert text or a number in color into a round, square, diamond-shaped, etc. shape of another color and be able to choose the dimensions... I need to create company logos and park numbers for 1:50 scale miniatures, so it will be small... I can do it by inserting an image from a photo or a JPEG file, but the result is not as sharp, especially for numbers, as when I type in Word... I can create the desired shape with the background color I want but I can't figure out how to insert text inside it and resize everything as needed!

First of all, I had already started by forgetting the 2007 version which is an "unfinished" version... Indeed, the Drawing module is still in the old style, that is to say, the 2003 version. It is not compatible with the module of PowerPoint or Excel.
Furthermore, you cannot compare it with Photoshop... Word is just a word processing software with a Drawing module.
First of all, to answer your initial question, how to add text: right-click on the shape => Add Text.
Now to your question: how to make the text fill the space?
With 2007, there is no automation. You can enlarge your text as you wish, space it out, etc.
With Word 2010 or 2013, one word or several words can fill the space of a "normal" shape by distorting it... you shouldn't expect text in the shape of a star, triangle, or plus sign.
For that, we use the Transform Text function. This function does not exist in the 2007 version of Word. It exists for PowerPoint: Text Effects => Transform.
In 2007, we have the old WordArt that can do the trick for some things.
