How to set my blacks to 100%

Hello,

I had to create a document to print, and during my conversion to PDF, I must have forgotten or mismanaged something.

Indeed, my file in CMYK has the FOGRA39 color profile. My printer says that the profile is correct and that it is in CMYK. So far, nothing unusual.

However, my blacks, which I set to C0 M0 Y0 K100, appear according to my printer in four-color and not in 100% black?

Does anyone have an idea of "how I could do" for the next documents?

I won’t hide from you that this is not my background, and I’m new to the world of graphic design.

Bee, your PDF is perfect...!

The black is truly 100% black and the other colors are spot on...

In my opinion, your printer is making a mistake.. If he looks at it with Acrobat (Pro) without considering the profile you embedded in your PDF, it's certain that the 100% black will be decomposed into the 4 inks..

You have profiled your document with FOGRA39 (ISO 12647-2-2004)...
If you look at it with Acrobat (Pro - Output Preview) applying this profile, your black is indeed at 100%.
But if you apply the FOGRA27 profile, your black decomposes into 75-70-68-80.. and what's even more concerning, your cyan also decomposes into 94-4-0-0.. which means it will be darker than a 100% cyan

That's why, personally, I advise against embedding a profile when the file is already in CMYK and intended for color separation... unless there is a specific request from the vendor.

One must not confuse performing the RGB->CMYK conversion with a profile recommended by the vendor and embedding a profile in a CMYK file.
