Manufacturers block this option, so from the printer, it is impossible to scan without valid cartridges.
But when you installed the printer on your PC, several small applications should have been installed, including a "Scan" one. You just need to turn on your printer and place your sheet to scan inside, regardless of the message it displays. Then you go back to your PC and open this scan application, which is very simple; there is just a "Scan" button that you click, and boom, your sheet is scanned and appears in your "My Pictures" folder.
For your information, I have an Epson Stylus SX210 printer, but I assume this can work with all printers that were installed with their installation CD, which includes all the small additional applications beyond just the driver. It might also be possible to download this application, but I couldn’t provide you with information on that =/
