Hello,
I would like to know if the Canon 500D has a black and white or sepia mode.
I've read the manual and searched the web, but I haven't found anything.
Thank you for your help!

Configuration: Mac OS X / Safari 531.21.10

Yes, you can have black and white shooting in the menus.
I don't recommend using this mode!
The method of desaturating the image or converting it to grayscale with your camera or Photoshop usually produces results that are too low in contrast.
For better results, it is preferable to use a channel mixer. It allows you to create high-quality grayscale images by choosing the percentage of contribution from each RGB color channel.
Thus, it is possible, for example, to reproduce the spectral sensitivity of a black and white film or to enhance the emergence of a channel in order to change the contrast of the image.
Photoshop has this feature. It can be accessed by navigating through the Image menu, then Adjustments, and finally Channel Mixer. The free software The Gimp also has this feature called Channel Mixer in the Filters menu, Colors, Channel Mixer...
