Hello,
When I create a folder, whether it’s a Word, Excel or other format, and then check its properties, I notice that it is automatically set as an "archive" file.
Does anyone know what this means and what the risk is of unchecking this property?

I see that it is automatically in "archive" file
I suppose you are talking about the archive attribute code, and that seems normal to me.
If you are using a backup software that works incrementally, it uses this code to only back up modified files and removes the flag so that it only takes that file next time after a new modification, as any creation or modification of a file sets this attribute.
