OUTLOOK: automatic line break issues

Hello,
I am contacting you hoping that someone can shed some light on my situation because after several days of searching and tinkering, I still haven't found a solution.
I am using Outlook 2007 with my emails configured in HTML format and my problem is as follows:
When I write the email everything goes fine; if I press "Enter", I go to the line just below. However, once my email is sent, it arrives in my correspondent's inbox with a big line break between each paragraph. So every time I hit "Enter" to go to the next line, it displays as if I had jumped 2 or 3 lines.
If needed, I can send you an email to your address so that you can see exactly what is going on.
If you have any ideas, please help me solve this problem as the layout of my emails really does not look professional (and I am starting as a pro).
