for a simple photocopy, the Epson ET-2856 asks for a lot of unnecessary settings, why?

A low-end copier will produce an A4 document in black and white, and that's that. If it's a more advanced model, there should be a selection on its control panel and perhaps the ability to save settings on high-end models.
An printer that is asked for a direct copy is not a photocopier; it should request black and white or color, size, number of copies, etc.
The only way around this is to scan to the computer (then print), where the management software Epson, Epson Scan for sure, while I don't know about others, allows you to save such a profile within certain limits (size, color, resolution, output format...), so there are only two operations left, scan and print.-
As far as I remember, the flatbed scanner I bought for work a few years ago (Canon, they're pretty much the only ones that still make these) had several buttons, one of which for copying allowed executing the settings saved on the computer.
I currently still have an organization of this type, a Brother black and white printer and an old multifunction Epson that I only use for copying-scanning, but still from the computer.
Everything that is sold to do a bit of everything tends to do them all poorly, especially when it comes to entry-level family multifunction devices rather than professional ones.
