Crop a shape in an image

Hello, I need help to crop a shape in an image and especially to save the cropped part. Here is an example of what I would like.

      Openoffice, I downloaded Photofiltre but I still can't crop the shape and retrieve the cropped part.

        It looks like you want to recover the cutout, maybe to make a stencil...?
        Personally, I would do a vectorization in Inkscape.

        Vectorization works very well for this kind of image, but it's trickier if it is highly colored.
