Hello, I was very naïve to give my bank details to a site that offers 3 free days and then to unsubscribe beforehand to avoid any charges... you probably know the rest, in addition to the one site, two others were added and even after unsubscribing they charged me, here are the sites:

There will be no risk IF AND ONLY IF you have properly followed the unsubscribe procedure and their terms and conditions.
If it says that you need to make a request by letter, then do it (and by registered mail). If you follow the unsubscribe procedure, you can block the payments on the same day. But be careful not to block them if you haven't followed the procedure, as they could claim the money (even though they won't go to court for a few ten euros).
I think I have managed to contact their support connectbilling (transaction platform) even though my account says flghelp.com. After successfully canceling the subscriptions myself, I spoke on a support chat on the same site, and they told me that my account has indeed been unsubscribed and that a refund ticket has been opened, assuring me that no other payments will be made. I still made a block on my card, so I don't think I will be refunded the amount, but I shouldn't have any problems.
On the other hand, for me, the fact that two other sites are opening up might seem suspicious, and for that, if I were you, I would report it to the internet police so that others don't fall into the same "trap" as you did.

I’m following up with you; apparently, the refund has been processed from their side, so I'm waiting for it to appear in my account. Furthermore, their support assured me that the subscriptions to the 3 sites have been canceled and no other payments will be made in the future. Since I’ve disputed the charge on my card, I don't expect to receive the refund, but they won't be able to take any more payments just in case. I’m still stressed about the fact that they’re asking me to pay. I’m staying vigilant—do you think everything is settled and the issue is resolved?

An email is not a written document in the judicial sense; only a registered letter (RAR) is valid.
But anyway, since it's probably a site not governed in France, even the letter would not be enforceable before the jurisdiction. See the T&Cs and GTC which MUST indicate the competent jurisdiction in judicial matters.

In France, the bailiff's act (or now the court enforcement officer, let's keep up with the times), but also the electronic registered letter as long as it complies with the specific authentication requirements (which should theoretically go through a certified third-party company) have the same value.
Abroad, this is unpredictable and the way to initiate a procedure depends on the law of the relevant country (subject to the fact that for some there is indeed a legal framework).
Of course, the nature of websites hosted in exotic countries is that they contain neither General Terms and Conditions (GTC), nor General Conditions of Use (GCU), nor any physical identification of the company and its address, and that is why they should not be used.
Thank you for all this information. Even today, I checked the unsubscribe sites and they no longer have me in their files, and they still claim that no payment will be requested from me. I was even sent a refund for the payment made. We'll see next month; if there's no claim, this will be settled for good :)
