Invasive Google Assistant

Hello
For a few days now, Google Assistant keeps intervening unexpectedly, and it pauses and changes my volume when I'm watching a video or listening to music.
I’ve tried everything: uninstalling, disabling it in the settings, voice match, factory reset... It keeps coming back and it's REALLY annoying.
If anyone has a solution, I don’t know why it’s doing this, it just started happening overnight.
I think it only happens when my headphones are plugged in; I have a Huawei P30 Lite.
