Hello. You can definitely change the email address of your PSN account. You need to go through the settings manager of your PS4: https://www.playstation.com/fr-fr/support/account/change-sign-in-id-email/.
As for your Rockstar Social Club account, I think you need to make the changes from your desktop, directly on the studio's website: https://support.rockstargames.com/fr/articles/200146096/Changer-son-pseudo-ou-son-adresse-e-mail-du-Social-Club.
