Unable to change default program

Hello everyone,
here's my problem.
When I want to change the default program for a file, it doesn't work on Windows 10.

2 reasons:
- it only changes to a compatible software
- it doesn't change at all.

So I was wondering if Windows 10 limits the options for changing the default program.

Do you have any tips to help me address this?
And especially to understand how all of this works in Windows 10.

    Press Windows + R
    Type --> regedit.exe and OK.

    Follow this path:
    HKEY_CURRENT_USER\Software\Microsoft\Windows\CurrentVersion\
    Explorer\FileExts

    Look for the extension --> .ai
    In the subfolders, do you have --> UserChoice ?

      In FileExts, did you check for the .ai extension and not just for FileExts?
