So I have a laptop with an i7 6700HQ and a GTX 960M
My question is, can I replace it with a GTX 1050 or 1060 (like on the new laptops)?

Most likely not.
For various reasons, ranging from heat dissipation to the power that the graphics card needs to operate and that the laptop provides, not to mention that the chip is probably soldered.
So, in 99% of cases, you do not replace a graphics card or a processor in a laptop, unlike a desktop PC. If you plan to upgrade the machine over time, it's a desktop PC you should invest in.
