Remove an email address from GMAIL, but do not delete it

Hello,
on my phone (Android), I have the GMAIL app, where I have 3 Gmail addresses, and I switch from one to another.
The thing is, I want to remove one email address from the app (the email box of an association I am no longer part of), but I don't want to delete it permanently (because of course the association needs its email box).
I don't understand the procedures I've found on various forums (even though I see the same kinds of questions) because I feel like you have to permanently delete the account...
Can you help me?

Hello,
This takes place in your phone settings: go to "Accounts" --> "Google" --> the address you want to remove from your phone (but which must remain accessible to other members of the association) --> the 3 small dots in the top right corner --> "Remove account"

It doesn't work for me, it doesn't show the delete option.
