Hi everyone, let me explain the situation :)
Basically, I'm a 15-year-old guy.
(I want to point out that my parents enrolled me in piano lessons since I was little, and I decided to quit them, unfortunately in a harsh way, two years ago; I mention this because it relates to the rest of the story)
My parents have always been strict, so I've been a (very) good student at school. I'm currently in the first year of a science track in a good high school.
However, my parents always took my phone away, all the time. Basically, I would take it in the morning before going to school and leave it in the kitchen when I got back.
Before the summer holidays, I negotiated a "deal" ;)
basically, I had to read a lot for the French baccalaureate, resume piano and practice regularly, and bring home good grades (which I've always done) in exchange for them allowing me to keep my phone 24/7. After several crises (ahaha), I finally made them crack and they agreed. So I had my phone 24/7, as promised, during the entire summer vacation.
However, when school started again, my parents took my phone back while I was studying and in the evening; I didn’t think I would have breached the deal (I think it’s normal because when you’re abroad visiting cities all day long, in the evening you don’t really want to read, and you can’t play your piano), anyway!
So here they are taking my phone back in the evening and while I'm working, and I find it terrible because in the first year you need a social life and all of that, it’s not like before, you know.
(And also, their argument is: "because that's how it is, it’s the same in all other houses).
They no longer trust me because I supposedly didn't respect my deal, and now I don’t know what to do.. please help me!!

Mmmm... What you need is family advice... The agreements between your parents and you are your concern. Whether or not you have respected your parents' educational guidelines is the same.
If you did not uphold the deal, the consequences follow, that's also "normal". After that, you will find here and elsewhere people your age who have their phones all day, who take money from their parents and who even spit on them... The kind of "youth" who find all of this normal and who for me only provoke one thought: "a good smack" and their parents are fools.
In short, family and education are not a universal recipe, and the deals are part of the rest; the only people who know if the deal has been respected are them and you.

I understood well that you didn't do it :-) No worries, I'm just making a comparison to say that we see everything but that this "problem" remains personal.
But every family is different.
If I were your parents and the deal wasn't respected, I would do the same. (I have two daughters aged 12 and 24, so I know a bit :-) ). However, I am not as demanding (but not permissive either). -

I got my first mobile phone when I became a grandfather, and it didn't stop me from having an extremely active "social life"!
There are still countries today without mobile phones, where there is a rich "social life".
You won't die from not having A phone (and not YOUR phone).
Retirement is great! Especially in the Caribbean... :-)
