Hello,
I am using GIMP 2.8, I merged my layers and then saved everything in the xcf format. I reopen the image to modify it but I only have one layer left. Is there a function to unmerge the layers to make certain modifications?

No. Once the image is flattened (or the layers are merged) and you "save as" in XCF, you cannot go back
However, if after the modification you "save as" without flattening, when you reopen the image, you can return to the original image by deleting the modification layer
