How to recover your albums from iPhone to Mac?

You took 7000 photos on your iPhone? And created all the albums on iPhone, without ever going through iPhoto or Image Capture on Mac?

In principle, we do this differently. We take photos with our iPhone, then connect the iPhone to the Mac, and from iPhoto we import the photos onto the Mac. The photos are at that time on the camera roll of the iPhone.

Once the photos are in iPhoto on the Mac, we create albums, possibly edit the photos, etc..., and possibly prepare albums that need to be synced with the iPhone. It is then in iTunes that we choose the albums to go on the Mac... and carry out this sync. The camera roll of the iPhone is only a transitional step between the moment the photo is taken and the import to the Mac.

So, you took 7000 photos and created albums on the iPhone to now sync in the other direction...?

You have done the opposite of the simple method, but you can still do it by following the method recommended by Apple. And if it's complicated to do it all at once, the 7000 photos, you can proceed step by step, album by album..., meaning that you only export one album at a time, and you put everything in its corresponding album on the other side, then you start again for the next album.... even possibly using Image Capture, the application available on the Mac, before importing them into iPhoto.
Note that using iPhoto for iPhone should simplify things.
