Hello,
I would like to know how to set the default preferences to high resolution in Illustrator CS on Mac OS X.
Because I am encountering the problem of grayed-out resolution options when exporting to EPS (defaulting to 72 dpi) whereas I want them at 300.

I don't know what you really want. But I will answer you from several angles.
If you import an image into Illustrator, it cannot be what it originally is. So if the image is 72 dpi, it will only be at 72 dpi unless you import it into Photoshop and modify its resolution.
By default, the software will always work in the format you previously worked in. If you worked in 72 dpi before, the subsequent work will be in 72 dpi; if you worked in 300 dpi, the subsequent work will be in 300 dpi. Of course, for this, your work must have been saved to keep the preference.
Otherwise, always open a new document and change your preferences each time.
