An image is composed of several channels (red, green, blue, and alpha for example, or cyan, magenta, yellow, etc.)
A channel represents that component.
For example, the "red" channel represents the amount of red for each pixel in your image.
The types of channels depend on your color model (RGB, CMYK, L*a*b, etc.)
Do not confuse channels with layers. -

In a tutorial, (where it explains how to create a smooth sphere), there comes a point where it asks to create a channel. It shows an image where, in the layers window, there are three different layers representing the sphere actually in Red, Green, and Blue.
When it asks to "create a channel", does it mean to create 3 color layers RGB?

No.
We can create additional channels in grayscale.
They don't correspond to anything (neither to red, green, nor blue), but we can use them later as a selection (for example).

Here we go. I've at least found the proposed translation for channel: in French, "photoshop" translates it as "couche."
But I suppose this translation won't suit you!!!!!!!

In my version of PS, I don't have the little dotted circle icon in the bottom menu bar of the layers window that seems to be used for those damned "channels!!!" -

I did this back in the day on Photoshop 4.
And I no longer have Photoshop.
I'm sorry...
But it should normally be found in the Photoshop manual!
